Cookin' with Coaches Archives:
Episode 1: Dave & Tammy Cecchini (Mexican Wraps)Â
Episode 2: Joe Meehan (Sockeye Salmon)
LEWISBURG, Pa. -- Bucknell head softball coach Joey Lye is our guest chef in the third installment of "Cookin' with Coaches", presented by Weis Markets. In this weekly series, the premise is simple: we asked some Bucknell coaches to take us into their kitchens and make their favorite meal or dessert. The series is not meant to be a lesson in nutrition, instead we asked the coaches to prepare something that they and their families simply enjoy. In the spirit of social distancing, the videos, just like the food, are all homemade by the coaches. Â
Coach Lye has been with the Bison for the last three seasons after coming over from Lebanon Valley. She was selected as the Patriot League Coach of the Year in 2019 after leading the Bison to a program-record 14 wins in league play, which included a 12-0 start. She is also an active member of the Canadian National Team, and she was all set to play in the Tokyo Olympics this summer, but the games have been pushed back to 2021 due to the COVID-19 pandemic. In her limited spare time, Joey enjoys preparing her own food, and in this episode she shows us how she gets her day started with delicious and healthy pumpkin muffins and breakfast sandwiches.
You can check out the full recipe here while you follow along with Joey. Bon Appetit!
