Joe Meehan Shows off Culinary Skills in Episode 2 of Cookin' with Coaches, presented by Weis Markets

LEWISBURG, Pa. -- Assistant men's basketball coach and resident foodie Joe Meehan joins us for the second installment of "Cookin' with Coaches", presented by Weis Markets. In this weekly series, the premise is simple: we asked some Bucknell coaches to take us into their kitchens and make their favorite meal or dessert. The series is not meant to be a lesson in nutrition, instead we asked the coaches to prepare something that they and their families simply enjoy. In the spirit of social distancing, the videos, just like the food, are all homemade by the coaches. Â
Coach Meehan just finished his fifth season with the Bison hoops program. A star player himself at Lebanon Valley College and then professionally in Switzerland, Joe travels abroad each year as the coach of a college all-star team as part of the Global Sports Academy. He also loves healthy foods, and in this episode he shows off his culinary skills by making a plated meal of brown sugar sockeye salmon, jalapeno Brussels sprouts, and parmesan risotto.
